So I guess I was doing the right steps, just that the codes might not have been updated correctly/fully. Thanks again for the tips. Unfortunately I was never a DB guy, hopefully I won't run into similar issues again....

On a side note, I installed the server, and subsequently restored an old database on Ubuntu 22.04 LTS, and it seems to be running fine for the time being. It has only been running for an hour or so, so it is still too early to decide, but it seems fine.
