Default Disableing expanshions on your server?

How would one go about doing this.......Tryied searching for it but cant seem to find it...

If by "disabling expansions" you mean disallowing clients associated with those expansions from connecting to your server:

In the main folder for your server (where the binaries/exe files are) there should be several files with names like "patch_6.2.conf", "patch_Titanium.conf", "patch_RoF.conf" and so on. Removing any of these files will prevent the associated client from connecting. At least, as far as I remember.

If you're just talking about disabling content instead, you would have to manually remove it from your database or prevent players from entering the zones or some such.
