No no, I mean, like, can I just go and create an uber character from the start, or do I have to level like normal?

If you make your own server, you can lvl yourself to 60 and get any item you damn well please. If you get on someone elses server, you might have to lvl up yourself, you might not, depends on the server you go to. Don't ask which server is good, cause I don't know :p Some other stuff to, didn't want to name everything you could do on it, let someone else make there fingers go numb :)
