Is there a known issue that drops hp to 5 and mana to 0 if you go past level 75?
Otherwise is there a setting somewhere to change this issue?
I have the rules value set so Character:MaxLevel and Character:MaxExpLevel are set to 80.

Yes, those are known issues and that is why most servers only allow leveling to 75. I don't think there is a work around or atleast not one that I am aware of.

Glad it's not me then, I have ran into enough issues with getting my setup going with things I overlook or find a lack of documentation on.
Maybe I can eventually writeup something to help others.

BTW I wasn't trying to be sarcastic towards anyone as far as documentation.
I am a documentation/how-to addict and would eventually help out in updating the existing or creating new.

Yes, that is a known issue with SoF only as seen here:

That does not happen on Titanium, but Titanium has it's own stat display issues for any level over 70. We are not sure why SoF causes that problem when over 75, but there are definitely some possible (hackish) work-arounds for it. One idea I was thinking of was that if a character is over level 75, we could have it set one of their item slots to add their base hp/mana/end to the item before sending it to the client. This would simply be to make it so the client shows the appropriate amount of hp/mana/end. The server always knows the correct HPs, and if you do a #mystats, it will show that you have the correct stats even though your client doesn't show them properly. I think the only problem this really causes is that it allows your HP bar to remain full while you take damage or use mana/end until you use the amount of your base stats that aren't being displayed, then it should start dropping like normal. It is more of a display issue than anything, really.

Ah ok, thanks for the detailed reply and ideas. I just expected that it was real hp/mana :-) I never tested it.
