What are the Skill Caps?

Not 1HB or Fishing... not stuff like that.

but AC and Strength, and wisdom etc. is there a cap in place that at some point it does no good to increase that stat anymore?

Those aren't skills, those are stats. The base cap depends on level, and then it can be increased by certain AAs. I think Titanium clients stop showing stat increases every level after 70, but SoF seems to increase by 5 every level just like every level since level 60 (cap at 60 is 255, I believe).
