Your server is not running unless they stay open, if they cloe really quick that means it failed and gave an error message. Try running the programs in a Dos window so that even if they close the window stays open and you can see the messages.

Default It's not working

If it closes right away, then something's not working right. Run it from a dos box to see the error messages. Go to start, run, type in cmd, then navigate to the folder with world and zone, then type world. Any error messages will stick around after the program exits. After you get world working this way, open it normally and then try opening a single instance of zone in the command line by typing "start zone . YourIP 7995 localhost", where YourIP is your external ip address. Again, any error messages will stick around. Once both are working, start world normally and then use the boot5zones.bat to start your zone servers.

Default Dwnload EQEmu config

Go to Sourceforge (click the files link on the left from the main eqemulator.net page) and download EQEmu config for whatever version you're running (probably 5.6). Unzip that to the folder you have world in and try again. Note that you will have to change some of the files before anything will work. Also, if you don't have MySQL installed and a database set up, nothing will work. Look for guides on the forums (there's a new one done today that was pretty good) and follow one of those.
