I have not added zones myself, I have used older zones which require client files updated. However, chances are the quest is not in the stock servers list so you'd have to add it yourself or find someone who wrote it up.
I'd start off just messing around with the basic SQL tables to customize your server before you get into advanced customization.
Mess around with rules and xp. Then you could look up adding skills to classes. Maybe, customize an existing quest to utilize the link text. Make a custom spell/items. These things you can find info on easily.
