I wrote an item editor a while back that could do this, but I gave up on it after the new wave of item editors came out that worked with the new DB format. It does have the ability to save all of the named fields from the Item_Struct to a readable text file though (one file per item).
I've a attached a sample of what it's output looks like so you can see if it's any use.
