Yes you can add all rings or specific armor peices to merchants but they won't all fit on one merchant. Best I remember you can have around 120 items on a single merchant. Assuming that is true..I filtered out just rings and there were 1577 rings and that would take 14 merchants to hold them all. You could always write a perl script to automate the tedious part of the creation process or it might be that one of the existing tools will create the merchantlists for you.
