Editing / changing Loot tables and items question..

How do i edit change items? (such as make wurmslayer offhand and main hand usable OR removing effects from items that shouldnt be there if running a classic server) and add/change loot tables for mobs (such as making manastone and DE mask drop from their mobs again)

This even possible what do i need to get software wise or look at from my heidisql programe to alter / apply much wanted changes Id like to make to my server?
