No you cant, the point of backing up is to back up EVERYTHING. If they make a lot of changes to the common files (which has already been done which is why you cant use a fresh install) and you patch to get them then you wont be able to play.
We say back
EVERYTHING up for a reason. If you dont have the required HD space to copy the EQ directory and zip it, just bur it onto a bunch of CD's.
We cant tell you what files will be needed to go back after the next patch because we dont know what there going to change with the next patch.
