Which server to choose?

Greetings, I am new and need some server advice please!

Which server is my best bet if I want to do a more classic experience, opposed to the poop-on-a-stick content which Sony forces people to play with all the easy "phat loot".

Obtaining electronic pieces of fictional gear is not my main focus, although it is fun to advance a character and watch him development.

And is there any PvP servers? I unfortuneately was not playing back in the Rallos Zek glory days.

Not really looking for any custom content at this time.
